Mlle. Poulet Fantastique

I'm considering changing my name. Or, perhaps I should take on a title:

Mlle. Comida Evangelista, Le Grande Dame du Poulet.

Oui, that could work. I don't even like chicken, but I tell you, I am The Queen of cooking it. Even I almost like my own chicken dishes.

Last night I made saffron rissotto with chicken. Marvelous breasts from Draegers were pan seared for about 3-5 minutes per side and then rested in a warm toaster oven while I finished the rice. The chicken, which was boneless and skinless at $6.49 per pound, was far superior to anything I have purchased at Whole Foods, (where the same cut is $8.99 per pound, by the way.) Chicken should smell pleasant. Yes, even raw. It's like fish, if the meat person won't let you smell it before you buy it, then pass. Fresh chicken should not be very fragrant, but will have a mildly sweet smell, a little scallopy. Draeger's chicken apparently comes from the same producer (Petaluma Farms), but somehow is less expensive, fresher and not watery.

I agree...plus Whole Foods is HQ'ed in Texas and does some shady things to squeeze out local co-op growers...granted I'm no hippy - but the whole granola-crunchy vibe to Whole Foods is a little too fake given it's corporate-ness
 
I am shocked. They are an extremely profitable company, bringing high quality foods to markets that otherwise wouldn't have them. I would think both of you would support that.

Now, in our area, we have choices. But I consider $6.49 per unreasonably inexpensive for Draeger's. Foster farms is only fifty cents a pound less, for the same cut, and it is gross.

I love Whole Foods very much, and their butchers are charming, but I might be off thier meats.

Lately I have been getting Western Grasslands beef from TJ's, (we need to have another beef flight, because this tastes much better-remember, Betty, you liked it?), and I will turn to Draeger's for chicken from now on. Fish, of course, only comes from Lion or Ranch 99. Basically, now I am just going to WF for the oatmeal, soda water and cheese. Maybe pork, still.
 
profitable yes...but i feel their image does not coincide well with the squeezing out of local co-op growers who would like to maintain their independant fruit stand.
